THE WINE THAT STARTED IT ALL:
We're in the small town of Portofino, Italy, it's the summer of 2017, Aperitivo Hour to be more precise and we stumble across this small wine bar called “Winter Rose”. There were only about 4 tables out the front of this tiny wine bar and they were right on the water's edge. The owner, who was working by herself, fixed us a table and explained that during the off peak seasons she’d travel around Italy and source very limited small batch wines that she loved and wanted to showcase at her wine bar during the summer. After leaving it up to her to pour us one of her favourites, she came back with a Vermentino from the area of Liguria (that we happened to be in). I remember drinking this wine with the water lapping at the break wall next to us, tasting the saltiness, the mineral rich citrus flavours and thinking how special that moment was with that setting we were in, drinking something that someone had picked and made by hand on hills around us that have been cultivated for hundreds of years... and that was the moment that really just started it.
BEST WAY TO START A MEAL:
I can’t go past a dirty gin martini whilst opening my favourite bottle to drink with the food that I’m cooking.
